I have a high key portrait with my subject against an all white background. How would I go about changing the background to a different color on photoshop? (My subject is also dressed in white)

Try the magnetic lassoo tool. Select the person, then invert selection.

I would create a new layer, paint the color you want around the person in that layer, then change the layering mode until the edge of the white and the person look natural ..

what i usually do is just use the flood tool at a very low tolerance.

Best way is to make a quick mask and fill on a new layer - easily editable - it's on a separate layer - and you get a nice soft edge to boot.
