I recently took a trip to Mackinac Island and shot a large number of images. I had shut off my 'review' feature on the camera to conserve battery power, since I mistakenly left the camera on the night before and the battery was nearing the danger zone.
I eyeballed everything the best I could and set the camera to what I figured would provide me with the best shots. Here's a handful of the better images that required little adjustment.
How do these look?
I also took a few shots of 'Mighty Mac' which is currently the 10th largest expansion bridge in the world. Unfortunately, with the distance we were from the bridge all of those shots are a little hazy. I have been tweaking one slightly and will post that this evening.

Are these shots really that boring?
If that's the problem, what could I do in the future to make shots similar to these less boring?

The following opinions are based on looking at the images from the perspective of would I see them hanging, in a book, advertising etc.
At the docks - I like the sun glow on the boat but mostly I get a feel of the image being slightly tilted and quite busy.
Somewhere in time - I know it's a perspective thing but the tilted horizon is usually not well received. The incomplete red house on the left disrupts the flow and would probably be better cropped out of the shot. It has good color saturation and I like the thunderhead in the background. The water seems to have more sharpness than the building, which is fairly soft.
Work horses - I like the warm sun glow on the left horse but the shadows seem a little too dark on the one on the right. The background is also a little busy. The buildings arent so bad it's mostly the person and the cycle wheel coming into the frame. I agree with your notes that a better angle/composition would have been better.
Stairway to - It has good ambient light but took me a while to realise what it was. Handheld at 1/25 has made it fairly soft but with that much foliage you dont want it too sharp. Did you try changing your ISO to try and get a little more shutter time? Some people blur the green layer in an editing program to give it a softer look while keeping the other elements sharp - gives it a nice magical look too.
Visit - Similar issues to the somewhere in time shot. Again the horizon has that tilted feel and the house seems quite soft. Did you try using f/16? The boat as a foreground element is good, and the spray adds interest. The color saturation is good.

Good shots given you were under the conditions you mentioned. I like the one with the boat in the foreground best. I think the spray adds interest to the shot. My only critique would be the rule of 3rds. If the boat had been lower and more to the right/left it would have more appeal. I think they are all nice shots :)
