is it acceptable to change the col shot to black & white in
photoshop?

yep.....it's in the guidelines (basic) and (advanced).....if you were wanting to do this for a challenge...nothing different than what you can do in a dark room and with 35mm film....
that's just my thought, I haven't had any problems.
