Since I got my rebel 2 months ago, I have had the focal point center weighted. If I were to use all 7 focal points, would that give a more accurate exposure reading?

I'm not a 300D user, but I did stay in a Holiday Inn Express lastnight.

What is it that you are getting in the exposure that you don't like? Using center weight/spot mode in any camera gives you the best exposure control. If you are still learning how to expose correctly you may not like the exposure the camera is giving you.

Try out the dynamic metering and see if you like it better.

Normally, the Rebel uses "evaluative metering", meaning the camera tries to properly expose whatever is in focus. It tries to take backlighting, etc. into account, but doesn't always do a great job. If you let the camera choose which of the 7 AF points to use, it will set the exposure for whichever one it chose (it seems to favor closer subjects). If you've manually selected one of the AF points, like the center one (is this what you meant by "focal point center weighted?), it will focus and expose for that one, although again, it will take the entire scene into account.

If you want the exposure and focus to be at different points (or want to use partial metering), use the AE lock feature: center on the exposure point, press the shutter halfway to activate the camera, and push the "*" button; then center on the focal point (with that the center AF point selected) and press the shutter halfway and hold it to set the focus; finally compose and take the shot.

The Rebel also sort of supports centerweighted average metering. Put the camera in manual mode and watch the exposure level display while adjusting the aperture and shutter speed.

the metering modes of the camera are not affected by how many of the focus points you have active - but by which mode you have the camera in. it outlines which metering mode is used in which camera mode in the manual. to get center spot metering in any of the creative modes - you can hold down the AV+/- button while you hold the shutter 1/2 way down. typically i will meter the scene, and then spot meter my subject to see if there is a dramatic difference in exposure settings, and adjust as i feel necessary.
