I'll spare you the test photos but I've made some observations.

I've been trying to learn to focus better and tried the DOF preview button on my D700. With all other settings being the same, I took two shots of 5 different subjects - one using simple manual focus and the other using manual focus with DOF preview. In 4 of the 5 combos, the one that used the DOF preview was MUCH sharper. On the 5th shot both were just as sharp. (meaning I hit the right spot on both even the one without DOF)

So I've convinced myself that using the preview, at least when the shot allows, will make my photos better. I have a question though.

When I use manual OR auto focus and center my subject in the "square" shouldn't that point be within the DOF of the current set f-stop?

Thoughts?

The D700 probably has choices about auto focus points, like the D7000. Look for "spot focus," and "multiple focus points" info in your camera manual. Then read it.

I've read it and understand it. I guess my next lesson (test) should be to manual focus using DOF, Manual Focus w/o DOF, and Auto Focus (spot).
