I came up with a great idea to practice and develop my photo skills, especially lighting, not giving away the theme, it think its pretty original. I'll post some samples when its done in a few weeks.

My question is, how many finished photos should I try to have in my final collection? I don't want too many so that the viewer gets bored, I also don't want to only have the minimum, is there a common range I should try to shoot for?

it really depends on the topic, your presentation, and how much time people really need to spend with any particular image. it's rare that i shoot anything just to get one photo; most of my efforts wind up being some sort of photo essay. as such, my typical gallery will have about 15 images. every now and then, it might be as many as 50. some all-day and multi-day events might wind up with as many as 200. regardless of the number of images, though, i try to ask for no more than 3 minutes or less of someone's time.
