I'm thinking it's time to upgrade my *ist DL and can get an 'ex-demo' K20D body very cheap. So, do I go with the K20 or go for the K-7? Reading reviews is all well and good, but has anyone actually got enough experience with these to offer any advice?

That question might be better asked at Pentax Forums then here. The ratio of Pentax users is significantly higher. In fact, here are a couple of threads on just that subject.
