I'm trying to put things in perspective because I'm kinda new
to digital, (my wife had to pry my film camera out of my hands!)
Using my 300D if I convert a RAW to an 8bit Tiff, what size of print
can I make?
What can I do with 16bit Tiff?(other than make an obscenely large file!)
Now using the large, fine quality .jpg setting, what size of print can I make with this? |

Depending on how they are going to be displayed and used, high-quality images can easily be upsampled to make very large prints. See these examples from the 3MP D30, for example.
There is no "set answer" to your question; a lot of it will depend on how good the image is (which is often dependent on the lens used), how it will be displayed (if it will primarily viewed from 6-8' away and not 2-3', you can upsample things larger), etc.
The 8-bit vs. 16-bit doesn't really affect "print size" too much. That has more to do with being able to manipulate the image. If you are converting raw, you can gain a few more bits of dynamic range (since the raw samples are 12-bit), but that doesn't necessarily translate into a "larger printable file".
My best advice is to just experiment, and see how big you can go and still have yourself and/or clients be content with the results.
P.S. This link contains some free interpolation actions for all of the various Canon DSLR's. There are also some commercial solutions available that may or may not produce better results...
