Most are going to be tied to a print service.

I have really good results with My Publisher. |

blurb.com
I recently used photoworks.com. The quality was fair to good (no complaints), but were a bit pricier than some.

Another vote for Blurb...especially if cost is important!
I liked the way the software worked, at least for the kind of book I was doing--where I wanted to get in as many pics (since they were show pics) as possible, but still look good.
Here's my book.

I'm in the process of doing a book and have looked at a few.
I didn't like the strict layouts in MyPublisher but the rest looked pretty good. I'm doing mine with blurb and really like the software. I've also seen books produced by Blurb and they look very good. |

Actually that is who I use. But they use My Publisher for the printing. If you are on a Mac, just use iPhoto and Apple. |

If you have Aperture, you can customize to your heart's content. |
