Does anybody have any good recipes for chicken breast and mangos?

I just bought 10 pounds of chicken breast since it was on sale and they are huge. I like large chicken breast because I have the choice of cooking them as they are, slicing them to the size I might prefer, or pounding them into filets perfect for parmigian or chicken marsala.

A lot of tropical fruit is in season here in South florida and one of the fruits that I find very inexpensive right now are mangos (mangoes?). I bought quite a few last week and a lot of them are over ripened and perfect (I think) for cooking with.

Recipes are easy to come by with a web search but they all say their's are good. I'd prefer to get recommendations from those who have tried some or made up their own.

I like the idea of sweet mangos paired with some spicyness. Any ideas to go with chicken???

I have actually made a chicken dish with mangoes before. And it turned out surprisingly well.
I never measure anything, so it would have to be to your taste.
Blend the mangos. But not into complete liquid.
Slice the breasts fillet since they are large.
Pour a thin layer on the bottom of a deep baking pan.
Lay the fillets in the baking pan
Sprinkle a bit of rosemary over the chicken (just a little or you will have rosemary all through your teeth).
You could also you parsley, italian seasoning, maybe even a little cajun seasoning (that might compliment the sweetness)
Pour the rest of the mongo over the chicken
I usually bake at 450 for 10 minutes and check. If the chicken is still pink, do 5 minute increments until done

I was expecting something completely different from reading just the title. I am slightly disappointed, but will try my best.

Mangos + onion + jalepeno = tasty... good on grilled pork or chik.

All of the above...in stock:

Onions
Jalapenos (fresh of course as well as chipotle)
Mango
Chicken

Sounds like a good combination.

Thanks for playing.

I'm sorry. If we were closer (much closer) I'd share my breasts and mangos with you if it would make you feel better.
