If I have my 40d drive mode set to burst and focus to AI Servo will the camera re-focus between shots ... I guess it won't but just wanted to check as the manual didn't say anything

I would think it's supposed to, actually, since it's supposed to have the ability to track focus, but I have no first-hand knowledge.

In AI Servo the focus is continuous. If your subject is moving your focus is changing. Remember though, your burst speed may be faster than the lens you have mounted can re-establish focus. I notice it mostly when I have the 75-300 mounted - that the focus of the lens is too slow for fast-burst mode so I end up getting like every other shot in focus.
