I took some family portraits for a friend and plan on giving them the photos on cds. I'm certain they will not have PS to view them as psd files. What would be the best file format to save them in?

Probably JPEG, which can be read by most software, including web browsers.

I agree with GeneralE. JPEG is the way to go.

The only way I know of in PS to save as JPEG is Save for Web. Is that the best method, and how large should the files be?

When you click on "save as" you get the box that comes up and lets you give it a name. Under that box is another drop down box which lets you save it to whatever format you want, just select JPEG.

Edit to add that if it is being viewed on TV or computer you dont really have to change the size. The size is only important if you are sending emails or have limited space (in this situation)

When I click on 'save as' JPEG is not one of the options offered.

Under Image->Mode ensure your mode is set to 8 bits/channel.
