To get the full softbox effect, you want to match the size of the softbox to the size of your subject. You also want the softbox as close to the subject as possible without intruding into the frame.

By giant are you talking 40' 50' or 60' rectangle? Octogon?

I have a 60' Rectangle If there is only one person in the frame I usually have it set up the tall way and just out of frame. The further away from your subject the more harsh the light becomes. If I a shooting a few people I turn it 90 degrees so it is wide vs tall.

Make that 2 for me please. great now I will need another studio just for my soft boxes. And to think I almost stole the staduim lights from the high school down the road to make a soft box this large.

Kind of odd - I tend to keep my light quite away from the subject for softer lighting?

The closer you bring the light to the subject, the larger its apparent size, and thus the softer the light.

Nope.

It's possible that the further away the light source, the more ambient fills, or the more bounced light you might get, either of which could soften things up.
