It seems like there are some fans of homemade sausage here at DPC (judgeing by the blue ribbon on my "normal" old ways photo!) so I thought I would give you some more information :) First, here is the winning shot with the original straight from the camera version:

As you can see the white balance is all funky in the original, but I was shooting for b/w (RAW original though) for this challenge anyway so I didn't really worry about it. We have a door just behind me that I opened for light which mixed with the regular lighting. I converted to b/w using Photoshop cs's "black and white" command, applied a smart sharpen filter and saved for web.

And here are some other photos that tell more of the story...




And here is the recipe..

3 lbs venison
1 lbs pork (boston butt)
1 lb chedar cheeze
10 fresh jalapenos
4 tbs Cilantro
1/2 cup paprika
2 tbs salt
3 tbs sugar
2 tbs garlic powder

Clean and de-seed jalapenos and grind with meat.
Mix all other ingredients together with meat.
Stuff into hog casings.

what are hog casings?

two questions : how much per pound and can you ship to memphis?

LOL Shane ...it is pretty much all gone now :) You know we are only 270 miles apart...by the way how did you fair in the storms? Everyone OK?

yes...hog casings = hog intestines. You can use synthetic collagen casings, but that wouldn't have been "old ways" and I would have gotten DNMC and no ribbon :) Actually I prefer the natural casings because you get that "pop" when you bite into them. It really isn't a "gross" process at all...

i saw a photo labeled 'corinth baptist church' in your profile. are you there or near by? we go through there all the time on the way to see my wife's family. (actually, she's in huntsville, now...) we live out a county east of memphis, really, so we're probably closer than that.

and yeah, we didn't get any damage here, though a friend of ours has been up in jackson helping her parents who's house was pretty much destroyed. the cell that hit jackson went over our house. wild.

definitely thanking God for our boredom that night...

Glad you are ok! That Corinth Baptist Church is outside of Magee, MS...not in Corinth, MS.

I guess they named themselves after the "Church at Corinth" although I can't imagine why they would do that after reading Paul's letter to them!

maybe they figured after the second letter, corinth turned it around...

guess that puts you down near my parents, then. they just recently moved to the jackson area...

can you just imagine a small church anywhere in the gulf coast having leather covered pews? imagine sticking to it in the hot, humid, summer swelter of august.
