So, everyday my boyfriend and I struggle with this question. It's my least favorite part of the day. We live in NYC, where delivery reigns supreme, but it gets expensive and we both really enjoy cooking.
I thought it might be fun to start a dinner idea/recipe thread. Let us know what you're having tonight, what you had last night, a cool recipe that you love, whatever.
I'll start..
A couple nights ago, I made Grilled Chicken with Broccoli Rabe and Feta Cheese on Toast.
Basically, you grill up some chicken ( I added a little balsamic to sweeten it a bit) chop it into bite size pieces and put it to the side.
Then take broccoli rabe and sautee it with garlic and a bit of olive oil and redwine vinegar. Add some halved cherry tomatoes and the chicken (with leftover juices) and sautee till the tomatoes start to break up. Crumble a bit of feta and remove from heat.
Toast some thick slices of crusty bread.
Spoon the chicken over the toast and add a bit more feta.
Voila!

minestrone of vegetables(vegetables soup with rice), $parmesan of eggplants(I think that is impossible to understand what is this hence here the link from "cook with me"here), peas with eggs, fish fingers.
the link is in italian but shoud be easy translate it.

Tonight we're having Porcini Ravioli with arugula, Olive oil and parmesan cheese. Luckily, we have some pretty nice grocery stores nearby!
The boy loves sushi. Maybe we'll have that tomorrow.

Sites like allrecipes.com have features that allow you to put in the ingredients you have (as well as ones you don't want) and match them up with recipes using them. I've found it very helpful in trying to clean out the fridge.

Oh yummy Barbara, recipe please! Please!
I made a frittata last night out of leftovers. Basically it's a deep-dish omelette, only you don't flip it. I whisked up 7 large eggs with some H20 (aka water), then threw in: chopped green pepper, cubes of double-smoked Canadian Cheddar, sliced tomato, chunks of Cajun sausage, basil, parsley, s&p, and nettles.
Yes, nettles, those sting-y plants. If you wear gloves and use scissors or gardening snips you can harvest them safely, and once cooked (basically in the same manner you cook spinach, ie sauteed or steamed) they are perfectly safe to eat. You can always substitute spinach instead.
Went into a Pyrex casserole dish, uncovered, and sat on middle shelf of oven for 40 min @ 350. Yummy!
Edit: am insanely jealous of people living in NYC cause they have access to food emporiums like Zabar's.

My favorite is Bacon Grilled Cheese..
Fry some bacon (I use turkey bacon). Butter your bread. Place your bread on the pan, top with cheese, then layer your bacon, then your other piece of bread. Brown..it is sooooooooo good!

I bought a Greek salad and I have some boneless, skinless chicken breasts thawing. I have no idea what I am going to do with them though. Last night I grilled burgers.

want something ultra easy?
buy a can of cambell's southwestern style chicken vegitable. add a cup of miniute rice. microwave 5 mins on high. season to taste (a little tony chachere's and tabasco for me...)
basically makes a quick and surprisingly tasty gumbo...
so easy, i keep it in my desk to make at work.

As I spend a great del of time working outside so i usully need portable food tht isn't messy or hevily packaged. I make my own beef jerky, very esy to do. |

Steamed striped bass (the Chinese way)
1 live striped bass (2-3lbs) from a tank in your choice of Chinatown fishmonger (I usually buy early in the morning $4.49/lb at present time)
Scallions sliced thinly along the long axis - 5-6
Ginger sliced very thinly into long strips
Sugar - 0.25 tsp
Soy sauce 2-3 tblsp
Salt 0.25 tsp
Oil - 4-5 tblsp
Bass should have guts out but head on and scales off
Wash gently and dry
Cut several diagonal slashes across sides about 1.5 inches apart
Place bass in steamer on suitable plate. Steam until done. Drain all liquid away (using a paper towel perhaps)
Cover the fish with the scallions and ginger. Put on rest of ingredients except oil. Heat oil to extremely hot in small saucepan - smoking. Pour over the scallion/ginger covered fish (thus cooking the covering). Serve immediately with brown rice previously cooked and Chinese greens with Oolong tea. |

Me too! But cooking was my 'obsessive hobby' before I discovered photography, so I haven't been on allrecipes.com in a few months.
My faves were:
Salmon with Lemon Dill - Super easy
Muenster Chicken with Mushrooms - good chicken variation
Honey Ginger Shrimp - awesome
Strawberry and Feta salad - delicious!!
ETA: You can even submit pics for use on the website! I never did, I quit cooking when I got my camera :P

Sunday BBQ
Saturday Goulash
Friday Macaroni
Thursday potatoes with broccoli and salmon
Tomorrow potatoes with carrots and chicken
Saturday: Chinese
Sunday: A dish of ovenheated potatoes and belgian endive with cheese and ham.

My husband hates fish but my daughter and I love it. Here is a recipe that he'll actually eat and enjoy.
Salmon Steaks Veracruz-Style
Prep: 15 minutes /Cook: 55 minutes
2tsp olive oil
1sm onion, finely chopped
2 cloves garlic, minced
1tsp chili powder
1 can (14 1/2 oz) no-salt added canned tomatoes, chopped with their juice
1 pickled jalapeno, finely chopped
1/4 cup pitted green olives, coarsely chopped
1 1/2 tsp capers, rinsed and drained
1/4 tsp each dried oregano and thyme
1/8 tsp each cinnamon and salt
4 salmon steaks (8 ounces each)
2 tbs lime juice
1. In a large nonstick skillet, heat the oil over moderate heat. Add the onion and garlic, and saute for 5 minutes or until soft. Add the chili powder, stirring to coat. Add the tomatoes, jalapeno, olives, capers, oregano, thyme, cinnamon, salt, and 1/4 cup of water, and bring to a boil. Reduce to a simmer, cover and cook for 30 minutes or until the suce is richly flavored.
2. Preheat the oven to 350 degrees F. Sprinkle the salmon with the lime juice and place in a 9X13 - inch baking dish. Spoon 3/4 cup of the sauce over the fish and bake for 15 to 20 minutes or until the salmon just flakes when tested with a fork. Reheat the remaining sauce and spoon over the fish before serving. Serves 4 |

Last night I went super easy... hotdogs with mustard, sour kraut, and chopped onions. yum.
Tonight I am going to try something really different. stuffed chicken breast with broccoli and cheddar, with a honey mustard glaze and an english muffin breading.
garlic mashed potatoes (might add left over cheddar), and a wilted spinach salad.

I never started cooking so I am going to blame it on photography! haha. I like to cook sometimes, but I am a very picky eater. It makes it pretty difficult & I normally just eat the same stuff I like over & over.

Sprinkle salmon steaks or fillets with Garam Marsala, hot chili powder, salt and pepper. Cook on piece of aluminum foil on grill at medium heat.
Meantime, combine seeded and diced tomatoes and yellow onion rings. Season with minced fresh ginger, Garam marsala amd red pepper flakes. Saute in olive oil. Cook until onions are caramelized. Spoon mixture over cooked salmon.
