My default camera has the ability to take an image, adjust the saturation or brightness of it, and save the changes.
Would this be unacceptable for entering certain challenges?

It's acceptable for expert, Advanced and Basic, but not for Minimal Editing.

kirbic...but is it ok to change those levels THEN take the image? sounds like a straight forward yes but want to make sure.

Absolutely! Any camera settings applied *at capture* are legal in Minimal, and of course all other rulesets.
