Fish is meat so here you go. Better than Tofu Tacos!!
Fish Tacos Recipe
Serves 6 to 8
A tasty dish from South of the Border. Try adding low-fat cheese or your favorite vegetables for variety.
Per Serving: 118 Calories, 9 g Protein, 2 g Fat, 17 g Carbohydrates, 1.7 g Fiber, 11 mg Cholesterol, 104 mg Sodium, 260 mg Potassium.
Diabetic Exchange: 1 Starch/Bread, 1 Lean Meat.
Ingredients:
# 1/2 cup nonfat milk
# 3/4 cup seasoned bread crumbs
# 8 oz firm fish fillets (red snapper, sea bass, etc)
# Nonstick vegetable spray
# 8 corn tortillas
# 1 cup cabbage, shredded
# 1 tomato, sliced
# Tartar sauce, or salsa and fresh cilantro (optional)
Instructions:
1. Pour milk into one shallow pan and bread crumbs into another.
2. Gently coat fish by dipping first into milk, then into crumbs.
3. Be sure that the fish is completely coated.
4. Place fillets on a baking sheet that has been coated with nonstick spray and bake in a preheated 350 F oven for 10 minutes or until fish is done.
5. Warm the corn tortillas in the oven and place the fillets, cabbage and tomato slices on top.
6. Serve with tartar sauce or salsa and fresh cilantro, if desired.

I'll be all over this one like white on rice, dahlin' I'm a meat kind of guy.
Let me start with a simple technique: when buying beef, get it well ahead of the cooking date (3-4 days), remove it from the package, wrap it in a clean kitchen towel, and refrigerate it on a plate in the refrigerator. It will age, giving up some moisture, and become MUCH more flavorful and tender. You can make ordinary steaks and roasts taste like prime beef by doing this.

Don't forget to wring the towel out into a nice tall glass, add some Vodka and a celery stalk for a refreshing "Bloody Bessie". ;-) |

T-bone
1- 16 oz or bigger T-bone
salt
pepper
Grill each side for about 15 minutes.
Remove from heat.
Slap on plate
Get some A-1
Cut it up and eat it
This also works for Sirloins, Ribeyes and other choice cuts of beef.

It probably bears mentioning that the meat will turn brown when exposed to air. This does not mean it's bad... just that it was exposed to air.

Cheese cloth works better. I wrap roasts in this about a week prior to cooking.

Drunken Buffalo Chili
2 medium onions, chopped
2 cloves garlic, finely chopped
1 teaspoon ground cumin
1/3 cup chili powder
1/2 teaspoon ground cayenne
3-4 Tablespoons crushed red pepper
3 pounds ground buffalo
1/2 teaspoon salt
1 40 oz can of Hot Chili Beans
1 22 oz can of Hot Chili Beans
1/2 cup tequila
salt & pepper to taste
* shredded Cheddar, optional
* sour cream, optional
* canned nacho-sliced jalapeno peppers, optional
Brown buffalo in skillet and drain. Mix all other ingredients together in a large crock pot (slow cooker), then add browned buffalo. Cook on low for 6-8 hours. |

Cheesecloth is great, but I don't usually have it when I want it and it's not very reusable, so I mostly use my dish towels (not the terry kind).

Which meat are we talking about? ;)
Anyway, here is simple and healthy one -
Ingredients -
1 pound minced turkey/chicken
5 cloves of garlic (pounded)
1 inch piece of ginger (pounded)
1/2 cup cilantro/coriander (finely chopped)
2-3 green chilies (finely chopped)
Salt and coarse ground black pepper
Mix all the ingredients and roll them into "bite size" balls. Take some water in heavy base flat pan and bring it to boil. Put the rolled balls into pan. Make sure water is enough for dipping 1/3 of height of rolled meat balls or enough for getting evaporated in 7-8 minutes on medium heat. Cover the pan with lid, lower the heat and let the balls cook in water/steam for 7-8 mins (or till the meat is cooked). Add a little more water if it dries before 7-8 mins. The rolled meat will bind itself when steamed.
Optional- stir fry these rolled meat balls in 1-2 spoons of oil (your choice) on high heat and serve hot as cocktail snack. You can also fry them with some Chinese sauce and can have it with steamed rice. You can also add some veggies while stir-frying.
If you can get hold of "Indian Garam Masala", you can add one small spoon of it to the mixture to get Indian kabab taste. But with this option, its better to fry the meat balls after boiling.

##Chicken a la Dragon##
Ingredients:
1 package of bacon
6 cloves chopped garlic
2 cups shredded colby jack cheese
4-6 chicken boneless skinless chicken breasts
1 cup amaretto
chives
Oregeno
thyme
salt and pepper
5 potatoes chopped and cubed
2 onions chopped and cubed
Directions:
Butterfly the chicken breasts, stuff with cheese, garlic and chives.
Wrap each breast in 3-4 strips of bacon.
Place in 13x9 baking dish
Add potatoes and onions around the breasts.
Pour in the amaretto then season with oregeno, thyme, salt and pepper.
Cover dish and bake at 350 degrees for 1 hour 45 minutes.

for some reason no one ever gets the farts from it. I think the tequila must do something to it. The guys at work love it |

Here's another.
1- 8-10# Beef brisket
Smoke at 250 degrees for 1/2hr. per pound(estimate,check with thermometer). I'm usually drunk by the time this is done.
Slice
Dip in BBQ sauce
Eat
Makes great sliced beef sandwiches the next day
This recipe also works well with pork tenderloins and whole turkey breasts.
