I do wedding photography, and I recently found a place to get my customers pictures photo finshed for a great price. When I go to place my order, there a ton of options for size, finish, etc... One of the options I can't figure out is if I want to order "5x7 matte" or (5x7 2-up matte".

Does anyone know what the "2 up" means?

In my experience '2up' was used for wallets and you would get two wallets on a single print. We also printed 4up and 8up wallets.

I am guessing you would get a pair of 5x7s (same image) on one sheet.
