is it legal for me to take photos in other countries that i would sell when i got home? specifically is it legal for me to take wildlife or scenic photography in canada, being that i am an american citizen, on a visitors visa?

I don't know of any laws prohibiting you from taking photos in Canada. (unless of course you are on provate property and there are signs saying no photography, but that would hold true in any country, not just Canada).

i'm concerned that i will be denied entry on a visitors visa
