I took this photo this afternoon, had some nice natural lighting and lots of color so I fired off a few shots, this was the best of the few. this shot seems a bit soft to me but I really like the colors and the comp...
Ok now you have seen it. What should I have done different anything? please be nice, I am sensitive, lol

[nice hat on]
This is a most gorgeous shot, nice colors and a pretty darn good crop to boot. Very tasty.
One hardly notices the less than sharp mushrooms or how bright they are.

Seriously, I think dof got ya here... the middle and trailing edge seem to have some good sharpness. If anything (IMO) oof would work on the trailing egde of the shot...but as it is in the foreground here the oof shrooms just reach out and grab me... they are looking a little hot as well. I might just try to crop out as much of the shrooms as I could. There is one piece of meat that is a bit oof as well. beyond that a pretty nice shot.

Way better (imo) no distraction in the foreground... Nice looking shot you have here.
let's have some fun and try some more of your skillz...
That one hunk of meat (middle arrow in the shot) still stands out. There are programs/filters that can sharpen that piece up a bit (but I don't have one so I fake it). Let's soften the whole thing up a bit, to try to hide some of the oof areas.
I use Digital Image Pro (should be close in PS)
Duplicate the shot to another layer.
Add degaussian blur to the top layer (I used 6 but this was on the resized shot).
Make the top (blurred) layer 50-60% transparent.
I flatten the layers in DIP, think it is merge down in PS.
This softens the shot and takes some of the emphasis away from the oof piece of meat (helps in other areas too).
The zuccini (other arrows in the shot) might be a good place to try out some burning... set your burn brush to -3 and slowly darken the shadows in the lower one and add an area that looks clearish on the top.
Again just my thoughts but have some fun with it.

You don't put italian tomatoes in a kebab! Actually you don't grill any vegetables with the meat either but that could be an exception.
Argh you people don't know anything don't you?

edit to add: i prefer the one without the mushrooms. not for taste reasons, i really like the photo better without the mushrooms in it.

First of all These are not Turkish Kebabs. Second of all my Wife is Asian, Chinese to be exact and she is the one that put them together. I only grilled them and they were delicious.
Ennil I have had 100s of Turkish Kebabs, Or as they are called Doner Kebabs the lamb meat wrapped in the tortilla with lettuce onions etc.
Is this the way they serve them in Turkey?
