2 suggestions:
Black & White in colour, that is, not a photo that has been changed to greyscale, but a colour photograph of only items/backgrounds that are black & white.
An item of a certain colour on a background of the same colour (green on green, blue on blue, etc).

Would be a great side by side challenge for the opens.

I like that... particularly the B&W in color.... Might even be enough to get me motivated to participate in challenges again.
