I've been playing with good ole' PS 7 and i can't figure out how to change or remove a given color and have everything else look normal like thie following:

looks like whoever did that selected everything except for the leaf and desaturated all color in that area, leaving the leaf that wasn't selected left with color...

in regards to how it's done, go to saturation and you can select individual color channels to desaturate

There are many ways to do this. It looks like what boyte did was "paint" the color back onto that leaf. What I mean is you can desaturate the whole image, then use the history brush on the area you want to "undo." If you look closely at the photo you'll notice some color outside the edge of the leaf. You can also copy the original to a new layer, desaturate that layer, then erase the part you want the original to show through. You can do what I just described but use a layer mask instead of erasing. Anyways, my point is there are lots of ways of achieving this.

I used the magnetic lasso tool to get these. I selected the area i wanted to keep colour then desaturated the rest.

Marbo... very nice images. Your choice of desaturation here and what you desaturated is excellant.

There have been so many desaturated images at this site that look like they are done just for the sake of doing it, but yours is approriate for these images. Nicely done.
