Dutchie speaking here. You'll arrive at a great time. Weather is perfect at the moment.
You probably know that Holland is a very small country. Driving from Amsterdam to Zeeland will take you 1.5 hours at most. It all depends on what you like to shoot, but Amsterdam itself is great for culture. Architecture is nice and old, people are very metropolitan. Be sure to check out the Vondel Park to shoot the local people relaxing and passing their free time.
Other beautiful old towns are Leiden, Gouda, Utrecht and Wijk bij Duurstede, all within 1 hour drive from each other. I myself live in Woerden, which is near Utrecht and has a small but very old city centre.
Zeeland is nice for our greatest achievement: the Delta Works. Miles and miles of dams which close off the sea to the lowest parts of our country. Zeeland is also great for watersports, so if you like shooting action, you can find plenty of parasailers and kite surfers.
Our greatest national park is The Veluwe, where I'll be this Sunday shooting for the Desolace challenge. You'll find some wildlife, but not much. We don't have much of it anymore.
