In the egg challenge this week there are a number of small brown eggs with dark brown spots that I'm not familiar with. Apparently they are plentiful somewhere because there seem to be quite a few photos of them. If I had to guess, I'd say they were quail eggs because of the size. Can someone tell me what they are and where they are from and what they are used for. I'm also a Professional Chef and have a great wonderment about anything food-worthy, especially from other countries.

It is quail eggs. It's a very high chlolesterol delicacy. |
