I just picked up "Photoshop CS Book for Digital Photographers" yesterday (can't afford to upgrade to CS2 after buying XT and lenses).

Great book so far and I'm really looking forward to enhancing my photos with a more professional look to them, instead of just mucking around with settings, not knowing what I'm doing. I do like to learn on my own, but with everything else that I'm trying to do with my limited spare time, I'd rather not spend the next couple of years trying to figure out what I can read about in a few days.

As for shooting RAW, I'm in that boat. I don't tend to change too many settings. Mostly just the WB and possibly exposure if necessary. I'll have to take a look and see what else I can play with before saving it to TIFF.

If anyone's still not clear on the differences/benefits between shooting RAW or JPEG, here's a great article that I just read on the subject.
