That owl is great; such a subtle desat that your mind is at rest watching and it seems natural. very nice.

Both photos are really nice, but I must admit I favor mushrooms photo.

I like the owl, the way the gaze seems to grab you.

Noobie question coming:
When you do desats, do you select the area you want to leave saturated, then reverse the selection and desat the rest? Sounds stupid, but I am still learning. And forgive me if this turns into a hijack, not intended.

Those are both very very nice. Does anyone take photos with selective desats in mind or does it just end up that way in post processing?

Depends on the subject and the format. You can convert the whole image to b/w then use the history brush to paint back the subject, you can mask out the subject that you want the color to remain and use the regular brush in desat/remove color mode are the easiest ways.
