What I'm going to do is move this to the 'Individual Photograph Discussion' forum, since 'The Critique Club' forum is for discussion of the Critiuqe Club only, and the Individual photograph discussion forum is for the discussion of individual photographs. Might get a bit more attention in the proper forum.

we really need to see much larger pictures than the ones you have provided to offer any assistance.

Second one looks better and mesmer is right about it being easier to help if we could see the larger images. One thing I might ask is if you used a gradient filter? Someone advised me if the use of one of those for sunsets, I went out and bought one and was amazed how well that worked at preventing the top from burning out!

1st shot was probably metered to the sun and the 2nd shot was probably meter right below the sun thus the better picture.

Metering the sun will make everything else darker and put it into shadow unless you use flash, but a flash can't illuminated landscape so this is out of the question. If you had a closer subject you want to get and it was back lit you could use a flash.

Shots like this is tought to do. You can use a gradient filter or take a couple bracketed EV shots and merge them.
