This guy has developed an interesting bit of kit; a plenoptic camera.

It takes a single exposure which can be digitally altered to to change the DoF across a variety of focal lengths.

His gallery, with short video examples showing the refocussing across focal lengths is very impressive:

Probably a few years away from hitting the consumer market, but v interesting.
