So I did a shoot with a family friend's newly adopted baby yesterday and did most of the shoot on my B&W parameters. Well I'm converting the RAW files in Photoshop and, of course, they're coming out colored. This was news to be because I've never done it before. :)
How do I change them back to black and white so that the converted RAW images match the jpeg's?
Does that make sense? Any help.

Yep. Channel mixer is the best way to convert to B&W IMO. Glad there was a tutorial already out there.
