I've read the basic edit rules but can't see anything which prohibits changing the image mode to greyscale or duotone. Are there any restrictions on this?

No restrictions on grayscale or duotone (or tritone or quadtone for that matter :-)

However, to avoid problems with displaying JPEGs, you should convert back to RGB as a final step before saving for DPC -- JPEG will not support Photoshop's Duotone format. |

Does basic editing allow for the use gradient map??
