I have noticed a bunch of B&W pictures in many of the recent challenges. Can anyone tell me if there is a trick to using B&W vs Color? I am still fairly new to photography, but am I missing something? Seems many B&W's I've seen are not very appealing as I would imagine their color counterpart would be. Are some shots better suited for B&W? Any thoughts?

I will admit that I sometimes convert to B&W because distractions that stand out on my color shot can be minimized in B&W. Some shots just look better in B&W. I'm not sure why some of the recent fall pictures were in B&W--I would think they would look better in color, but we didn't see the originals.

The answer is as individual as the photographer and the image. Some images lend themselves better to black and white. Some moods do also. Some require color. It really depends on what your goal is for the image. I use B&W for mood or when I believe tone or subject is more important that color. In some cases, color enhances the mood so I use that. I usually have B&W in mind when shooting specific images. Sometimes in editing I find the image lends itself to B&W.

In other words, I have no clue. Its just a matter of your thinking at the moment of either snapping or editing.

ditto what dahkota and chaimelle said. It depends on the image and what is in it. A lot of time if you want the image as a whole to be concentrated on and not the colors getting in the way then you use b/w. Even though you are taking away the color a lot of the time you are adding emotion. This is the same when someone selectivly desaturates an image to leave one or two colors only. This draws your attention to that one color and not the image as a whole. Sometimes that one color tells the entire story.

One thing to research and practice is coverting to b/w. You will usually get much better b/w tones if you adjust each level separatly (check out this similar thread: //www.dpchallenge.com/tutorial.php?TUTORIAL_ID=25 and others here: //www.dpchallenge.com/tutorial.php ) instead of just using the convert to b/w option. Have fun with it and do what feels right to you.
