What exactly does save for web do to make an image smaller datawise?
I know it strips the EXIF info, but what else?

Would it be ill advised to use the SFW option to save an image to upload for printing?

I think mainly it's a matter of providing dialogue to help you save it at a desired quality, and it automatically adjusts the DPI to 72.

PS -- I wouldn't use SFW for an image you intend to print.
