Why is one better than the other? |

Not sure what the question is based on how you formatted your thread title. 350D and Digital rebel XT are the same camera; the XT is the USA name, 350D is the Inetrnational name. 20D is the next step up the ladder, currently. The earlier model of the Digital rebel was aka the 300D. It's still available.
So what exactly do you want us to compare?

For what it's worth, the old 300D was also called the Kissn or something like it in Japan. It came with the same kit lens which was actually a USM model.
300D = a really great DSLR that can be had for very cheap second hand. Because of larger pixels, it has slightly better fine detail than the others at f22 and above. The difference is nearly negligible. It has technology from an earlier generation, so exhibits significantly more noise than the newer generation cameras. This is only noticeable at ISO 400 and above. This can be upgraded for free with a third party firmware hack that has been reported to be very reliable and opens a wealth of great features which were originally crippled by canon. It's primary drawback is that it is sluggish.
350XT = Successor to 300D. This camera has all features unlocked. Latest generation technology makes this camera lightning fast. There are no major technology issues with this camera. It is able to take very clean pictures up to around ISO 800 and in some people's opinions, ISO 1600. Pixel size and density is almost identical to the 20D. It offers almost identical performance to the 20D in MANY areas. Not all though.
20D = This is the top of the line in the "prosumer" amateur level cameras. It is nearly as complete as the higher up cameras. Most notable improvement over the 350XT is the drive mode at 5 fps, which is pretty much the minimum in my opinion for real burst mode pictures of anything including action. There are actually disadavantages to this particular camera, but they are mighty few. The only one I could come up with is the fact that it uses the much more expensive type of remote. Of course this is a one time purchase for most people and is next-to irrelevant. Photographically, this camera is virtually the same as the 350XT. This camera really makes a difference to the USE of the camera though. Differences include using a wheel to change certain functions and a larger viewfinder. The camera itself is bigger and some feel they don't like how small the XT is (most buy the Battery Grip for the XT to balance things out).
Resolution abilities of 8MP cameras is very very slightly better than 6MP versions. The surrounding technology however makes these cameras well worth the money. The biggest advantage to getting a second hand 300D is that it is quite a bit cheaper and will likely lose little value in the next six months if one wanted to sell it and choose a DSLR for upgrade later.
One thing I am not clear on that perhaps someone else could mention is the difference in the 350xt and 20d in terms of autofocus speed. I have heard that the 20D cleans up in this case. There is a special mode in the 20D for using lenses that have constant aperture of f2.8 or wider which makes autofocus A LOT faster. (not experience, have seen other comments on this) In cases other than this, I do not know how the 20d compares to the 350XT.
Hope this clears up your DSLR misunderstanding.
My primary sources for information were www.dpreview.com and Cambridge in Colour.

For what it's worth, ISO16000 on the 350D is rather impressive.
(actual pixels at 100% crop, shot at
night at 1/6 sec hand-held, no IS)
The battery grip is kind of a needed thing to add a bit of mass to a light body (especially after being used to the Oly E-10 with the big battery grip), but overall, the 350D is a nice piece of gear, at a very affordable price.

That's OLD news, but it still makes one shudder doesn't it? Hopefully he'll get stuck in 1600 mode and we can hammer him on noise...
