How to change my pictures background? Is there any process to delete the background from between model’s hair or like that? And what is BLUE background? I have read somewhere that, photographers are used blue background while they are taking photograph at studio (specially in glamour photography or for photography for commercial advertisement). After photo shoot they remove the blue background easily. Exactly what is this? If you know please help me.

A blue background is a very complex technical term. The key words here are "blue" and "background". Write those down. :)

But seriously, it means you shoot the subject in front of a blue wall or sheet in the background. Green screening is also used a lot in movie shooting. A consistent background colour that doesn't appear in the foreground object is then very easy for post-editing software to pick it out and replace it with another image.

Can you shoot on a "green screen" and easily chroma key in a new background? I know it's easy to do in Adobe Premiere for video but I hadn't even thought about it for Photoshop...

Any chromakey background, blue or green, will work. These are chromatically pure color fields, so you can select them with 100% accuracy if they are evenly lit. In general, I have found green easier to work with. We use it when we shoot our rare books, then strip in attractive backgrounds for display.
