How does changing the "Resolution" option affect the image? Shouldn't I just change it to 500?

I wouldn't reccomend it, I currently work at 150dpi then upsample if required, otherwise you will use tons of ram with the huge files you create by upping it early.I also keep mine at 16 bit until the end too.

Changing the resolution in the RAW conversion doesn't resample so no pixels are added. DPI is only of concern when you go to print and the size of print will be determined by the pixel dimensions of the image and the dpi at which you are printing.

I always have my depth at 16bits, size at normal and resolution at 340. Mainly because of the reccomendations of th RAW workflow books I have read. Works well...and when I want a larger photo or know how large I want to print at, etc. I bump the SIZE to its max and not the resolution, under RAW conversion.

Increasing it or decreasing does absolutely nothing to the image data.
What matters is the pixel dimensions. The dpi at this point is just telling PS how to convert your image into inches.

If you put 300 dpi here, PS will show your 3500 x 2330 (or whatever) pixel image as measuring approx. 11.7x7.7 when you open it. If you put 500 dpi, it will measure 7x4.7. It is the same number of pixels, though, as thus the same image.

Later, if you go to Image Size and change the dpi and the resample box is CHECKED, then you are upsampling or downsixing based on the print size in inches that you want. To see how chaning the resolution effects (or doesn't effect, in this case) the image go to Image SIze and UNCHECK the box that says resample image and play around with the dpi. The print size in inches changes, but the pixel dimensions at the top stay the same.
