Does anybody know of any shops in Toronto where one can walk in, buy, & walk out? With Canon dSLRs in stock, Rebel-series in particular, and a couple of lenses to choose from, perhaps?

Easy, Henry's!
I am a biased My wife works at the London location.
Great store and thier people know thier stuff.
You can even look online at www.henrys.com
I belive they even list inventory levels online.

Both Henry's (two locations on Queen St.) One is the retail store, the other is the openbox/used store. I've gotten most of my stuff from teh open box/ used store. They're a half block away from each other.
Vistek is down the street from them towards the beaches.
I also am biased towards Henry's They have a great sales staff, usually remember you and work towards helping you get what you want

you can also look up vistek as well. huge store and big inventory.

Henry's = suckage, catering to the lowest common denominator of people with cameras, large store with pretty good selection
Vistek = knowledgeable people, intimidating store, geared towards the pros
Aden = overpriced, staff muchly without a clue (rarely not the case)
Downtown Camera = smallish store, lack of niche, good staff, competitive pricing (sometimes)
I used to frequent Downtown Camera for everything, but now Vistek is my go-to store.
Unfortunately, Canadian retailers (or perhaps it's the mfgr's) don't seem to understand what competitive market pricing means, so it's usually cheaper to buy from somewhere like bhphoto.com. If in doubt, get your body locally, but buy your lenses abroad, like at bhphoto.com (use global express for shipping).

Thanks guys. I'm not too far from Henry's, so unless I get roped into a lunch I'll check it out, as I am the epitomy of the lowest common denominator with a camera, LOL!
