Would I get better all-round exposure of a photo using Evaluative metering vs Centre weighted? Especially when a subject is very contrasty?

Hmmm...how contrasty?
I am used to spot metering - i pick what i want to be mid gray level, hold the exposure and re-compose. My rebel does not have spot, so i use center weighted. at least i know what the camera is evaluating....

evaluative i think is the only option in Auto (green box) and it works very well.

You have the option of taking 2 or 3 shots at different exposures and blending them in PS, or shoot in RAW at and you can pull the exposure abnout 1-2 stops either way.
