A good overview at a fairly basic level is Digital photographers handbook by Tom Ang published bu Dorian Kindersley.

Also all of the old Time Life books are required reading for Intro to lighting, portraits, ect. There are about a dozen of them available at a library near you, and well worth your time.

I highly recommend "Understanding Exposure" by Bryan Peterson and Rick Sammon's "Complete Guide to Digital Photography"
