Use a black background.
Use flash.

A technique for creating a dark background outdoors on a bright day is to first meter for the background (or the entire scene), then underexpose by a couple of stops and use fill flash on your subject. This will produce a "bright" (properly exposed) subject in a scene that almost looks as though it were nighttime.
