I'm thinking about getting a teleconverter for my 200-500 5.6-6.3 tamron telephoto lens. The pro series 2x never seems to be instock at our local stores and I don't feel like ordering one. Which one would work better with my BIG lens? I guess if I get the 1.4x it will bring my aperature down to F8 and if I get the 2x then the aperature would drop down to F11. Also, I was reading something about if I go with the 1.4x then I really don't need to buy the pro series. Anyone have this teleconverter or can you answer these questions?

Teleconverters as a general rule work best with fast long primes. Quality declines more with zoom lenses than with primes. PLus you will lose autofocus with your camera with that combo.

From what i have heard the quality of the pic will decline, the AF will be lost, etc.

Not sure it is worth it.

Best thought is to find a person or a store that has one you can try on that lens and see the end result.

To find a person, look here on DPC for local folks to you and see if anybody has one.

Will the Tamron teleconverter work with Canon lenses as well as Tamron lenses?

Yes, at least sometimes they do. There is a lot of info about this in the forums at DPReview.com.
