Where can i find an explanation on each ofthese settings, since i can't find it on the manual? |

manual page 140.
EDIT: where is the "af stop button" its not in any of the diagrams and can be very useful to me when used with C.Fn-17.4

Page 146 says the AF stop button is only on super telephoto lenses? |

I think that's for AE lock. |

Oh, I guess maybe it's both. Check page 142.
"In the Al Servo AF mode, you can press the * button to stop the AF operation momentarily. "
Is that what you needed, Hsteg?

On the:
300 F/4 L IS USM
300 F/2.8 L IS USM
400 F/2.8 L IS USM
400 F/4 DO L USM
400 F/4 L IS USM
600 F/4 L IS USM
The black bit of rubber nearest the big end of the lens has four 'AF Stop' buttons on it.. (I've got the EF Lens guide on my lap...)
Some of the other big glass may have them, but none that obvious from the photos in the guide.
Hmmmmm, EF lens guide...

See you guys, its only on the crazily expensive telephotos. :P

Yeah, but I'm sure you're well aware that the manual is just the manufacturers 'opinion' now how the camera should work.
