I really like these types of portraits, makes me want to travel so I can go meet these interesting people and take their portraits. I really like your depth of field, i think you may have missed focusing on the eyes as they don't look as sharp as the rest of the face. Of course he may have cataracts. It is good to see that you lit this side on, maybe the use of a reflector would have helped as well.
You should also try a mono conversion of this as his beard will look spectacular in it.

Looks like other macro shots I have previously seen of fat floating on the surface of a liquid, so that is what I am guessing (at least for now).. Interesting patterns with the indentations on some of the "cells" ..
