2 Tbsp butter
1 small onion, finely chopped
3 medium carrots, thinly sliced
3 medium parsnips, peeled and sliced
1 medium leek, sliced
7 cups chicken broth
1 cup uncooked orzo pasta
2 cups shredded cooked chicken breast
2 Tbsp chopped fresh dill weed
1/2 tsp salt
Melt butter in Dutch oven over medium heat. Cook onions, carrots, parsnips, leek in butter, stirring occasionally until carrots are tender. Stir in broth and pasta. Heat to boiling and reduce heat to low. Cover and simmer 15 minutes, stirring occasionally until pasta is tender. Stir in remaining ingredients. Cover and simmer 5 minutes or until hot.
