Hey, nice idea! but cilantro... don't forget the fresh cilantro... and try red onion, it's less evil raw. Pincha salt too. You might get comments about the light being harsh, but since this is a 'kit', I can imagine it being kind of sterile and stark, so I'll go with that interpretation.
