What is your favorite method and why?

Favorite is CS3's Black and White conversion.... high level of control

2nd is Channel Mixer combined with Selective Color adjustments in the White, Neutral and Black channels. Good control

3rd... Curves adjustment using red, blue and green channels.....

Bibble with the Andy Pro Plugin.

It simulates numerous film and paper types and gives you virtually unlimited control over the entire conversion process. I have used it hundreds of times and still am amazed at the variety of excellent results I can get in just a few seconds.

I like CS3's Black and White conversion more than anything else I've ever used by a lot.

I've tried various methods. Desaturation/greyscale in PS turns out too flat. Desaturation of all individual channels in Camera RAW is better and has resulted in some conversions I can live with, although doing the same thing in Aperture will give even better (a broader gamut of tones) results. I rarely use the channel mixer or Lab conversions, because I just won't live long enough to make a specific selection from near-infinite choices. My preferred quick-n-dirty is Gradient Map (PS) at 0 %.
