why is photoshop showing shots striaght out of my camera are 72 dpi instead of 300 shouldn't they normally be 300? |

It depends at what size you want to print. 72 is acceptable for web/monitor display. In PS, you can play "what if" with various dimensions of the image to see what the DPI is used. This will give you a guide as to what the maximum size of a print you can print (with acceptable quality). Printing quality is usually 300 DPI, but sometimes 150 is good enough.

To answer your question, if you are shooting Jpg, they will come out 72 DPI
