I normally shoot in RAW mode, and convert to JPEG the pictures that I want to edit on, but with my latest upload of pictures, after opening from the RAW file and clicking save it does not have the JPEG option. Does anyone know how to fix this or how to save a picture in JPEG other than the drop down options?

Try going to Image -> Mode and change 16 Bits/Channel to 8 Bits/Channel and then you should have more file types to choose from when you go to save it.

Yes, I think that bhack has made a good guess that you might have done the raw conversion to 16 bit mode. JPEG files can't store 16 bit images so that option is not available when you try to save. If it isn't that, it is probably something else that you have done that makes the file incompatible with JPEG.

But I want to recommend against using JPEG to save your files. JPEG loses detail each time you resave a file. If you are using Photoshop, I'd recommend using the Photoshop format (.psd) for saving your files. The LAST step should be to "Save for Web" in JPEG format. And if you go back later to do more editing, do it on the .psd file.
