Alright DPCers, time to put on that chef hat and show me your wicked cooking skills! :D
I'm looking for some new recipes to try out so...

I'd like everyone to try this recipe. It's a delicious loaf/cake, not too sweet, perfect with a cup of coffee. No one can guess that there is tomato soup in the cake. My mom made it all the time when I was growing up. Simple and tasty!!

Tomato Soup Cake

1/3 cup butter
1 1/2 cups flour
1 can tomato soup
1 tsp baking soda
1 tsp baking powder
1/2 cup raisins
1/4 cup mixed peel (optional, I don't add it)
1 tsp cinnamon
1/4 tsp cloves
1 cup sugar

Dissolve baking soda in soup. Cream butter and sugar, add soup. Add flour, spices and baking powder. Add raisins and peel.

Bake in a greased loaf pan at 375 ยบ for 1 hour.

Dessert recipes?

Blueberry Sour Cream pie is one of my faves. I found the recipe on the internet. Just do a search on google and you'll find several varieties.

Here's the one I tried.

Play Doh

1 cup flour
1/2 cup salt
1 cup water
2 teaspoons cream of tartar
1 teaspoon vegetable oil
Food coloring

Mix together all ingredients and cook for 3 minutes over low heat. Stir well. Add food coloring. Store in a plastic container. Kids love it and it is easier to clean up.

I don't know about best, but this is my latest concoction -- I was actually going to submit it to a contest until I read the fine print in the rules, and realized I'd used an "illegal editing technique" for that challenge :-)

No-Cook "Fondue"

Can be served with veggies as a "salad" course or with fruits as a dessert or kid-friendly snack.
Low-fat versions of the ingredients make this healthier with little other change. You can use yogurt instead of pudding, and change the flavor as desired, though the lemon gives a nice tang which works well with either fruits or veggies; spices can also be added as desired.

Blend together until smooth equal parts of cream cheese and prepared lemon pudding, approximately 1 ounce of each per (small) serving.

Use long forks to dip in chunks of:

broccoli, carrot, cauliflower. jicama, celery, bell pepper, etc.
or
apple, pear, melon, or other seasonal fruits.

"Gringo" Carne Asada

Buy a pack of sirloin steak tips. Dry them with paper towels and arange them on a plate. Sprinkle with a good chili powder and massage itin. Sprinkle with fresh lime juice. Marinate in refrigerator a couple hours. Fire up a grill (or use a cast-iron, ridged frill or pan stovetop) and while it is heating brush the steak tips with a little olive oil. Sear over high heat on all sides, and serve medium rare cut into diagonal slices.

You can serve these as a meat course as is, or you can warm up some torillas, mince some onions, tomatoes, cilantro, whatever, and do burritos. makes good taco meat too if you chop it up after grilling and serve immediately while still warm.

Gado-Gado

1/2 cup peanut butter, crunchy
2 cloves garlic
1 small red onion, diced small
1 tsp sugar
1 tsp salt
4 carrots, peeled and quartered length-wise
1 block tofu, cut into 1/2 inch cubes
1 block tempeh, cut into 1/2 inch slices
bean sprouts
cabbage
broccoli
cauliflower
spinach
8 small potatoes, boiled and cut into halves
1 to 2 cup(s) coconut milk, warm

1. Mash up garlic, onion, salt and sugar. Mix the mush with peanut butter and coconut milk. Add coconut milk to get desired consistency for sauce. Should be full-fat-milk consistency.
2. Steam or boil all vegetables.
3. Deep fry tempeh and tofu until golden brown.
4. Serves 2. Into two plates, arrange veggies and tofu/tempeh in a nice circular pattern, ladle peanut sauce into the middle.

Uncle Pawdrix's Spiced Strawberries

1 pint of Strawberries for 2 people
1 fat t cinnamon
1/4 t nutmeg
1/4 t ginger powder
1/3-1/2 cup brown sugar
1 t Balsamic vinegar

Quarter your Strawberries into a bowl(washed and stemmed)
then mix in ALL that other stuff. The Strawberries will release their juices and form a syrop with the sugar as you chill the whole thing for an hour in the fridge. Done.

Serve over...Waffles...shortcake...vanilla ice cream...or in crepes

Glad you asked. Here is a simple thing I came up with that wows 'em every time. Makes a really nice appetizer, or a whole meal.

Shrimp/Tortilla Pizza

1 Pkg. large flour tortillas
1 Bag SeaPack frozen shrimp scampi
Fresh Spinach leaves
Fresh Tomatoes (sliced)
Pine Nuts
Goat Cheese
Grated Parmesan or Romano Cheese
Fresh Basil Leaves (not required)

Lightly toast tortillas in oven until they begin to turn crisp.

Sautee' shrimp scampi.

Layer shrimp, spinach, tomatoes and pine nuts onto tortilla "crust".
Drizzle scampi sauce lightly over entire pizza, then crumble goat cheese and sprinkle Parmesan/Romano on top. Bake in oven at 350 degrees until it looks done. YUM!

Biscotti

Ingredients:
3 cups all purpose flour
2 cups sugar
1 + 1/2 tsp. salt
1 + 1/2 tsp. baking powder
4 large eggs
1 tsp. vanilla extract
1/2 cup mini chocolate chips
1/2 cup toasted chopped hazelnuts

Directions:
Preheat oven to 325 degrees. You will need 2 parchment paper lined cookie sheets and some extra sugar for rolling. Combine all dry ingredients until well mixed then stir in chocolate chips and hazelnuts. Add the eggs and vanilla extract and stir to combine. Note: the dough will appear dry at first but will eventually become soft. At the end the best way to mix the dough is by hand. Remove the dough from the bowl and separate into 5 equal sections. Roll each section into a long log shape on a sugar-coated table and then place on cookie sheets. Bake at 325 for 45-55 minutes. The logs will be light brown. The baking time will vary depending on the baking sheets and oven. Remove from oven and slice each section on a bias to create the individual biscotti. Bake a second time for 5 mintues to toast the biscotti. Store in a tight container in a cool dry place.

Banoffi Pie
2 tins of caramelised sweetened condensed milk
1 banana
1 packet of crushed roundwine biscuits
lemonjuice
chocolate flakes
600ml of cream

Crush biscuits fine
mix with sufficient melted butter to make a firm thin base
put basemix into one of those expanding round cake things, about 12" wide, and press down firm.
spoon the caramel onto base and spread over evenly
slice banana and cover caramel
sprinkle lemonjuice over banana
whip cream to thick near clotted stage and cover everything else with it
sprinkle chocolate over cream
Refridgerate for a while til chilled
slice from centre out, usually about 16 slices
EAT.....very rich

Risotto with Porcini Mushrooms (for 4 people)

350 g long-grain rice
2 dl dry white wine
50 g dried porcini mushrooms
1.5 dl boiling meat stock
1 small onion, finely chopped
80 g parmesan cheese
100 g butter
salt

- Melt 50 g butter in a large saucepan and gently fry the onion until soft but not browned.
- Put the mushroom in some water to soften them, add them to the onion together with the water and simmer for a few minutes. Stir in the wine and season with salt.
- When the wine has evaporated, add the rice and fry until well coated, then stir in two ladles of stock.
- Continue adding stock in small quantities while mixing continuously with a wooden spoon.
- Simmer for about 20 minutes. Then add the parmesan and the rest of the butter.
- Wait 5 more minutes before serving.

I just heard one the other day, I havn't tried it yet, but it sounds really good for some reason (and sounds real easy too!):
take some acorn squash, cut in half and scrape out the seeds.
prepare your favorite meat loaf recipe
take the meatloaf and put in to the squash halves (where you scraped the seeds out)
a little butter, salt and pepper, wrap each squash in foil and bake

sounds really good to me :-)

Better be a really LEAN meatloaf, tater... Or the whole squash will be permeated with meat grease, which sort of defeats the purpose of a vegetable IMO :-)

That's a good point Robert. I have some 'special' ground beef from cattle my sister and her husband raise. Some of the best meat I've ever had. The people my bro. in law uses to process the meat gives him some of this 'special' ground beef out of every batch he processes. It is super-duper-lean! First time I made some huge burgers from it, and almost couldn't eat on a bun, 'cause they didn't shrink at all! When browning this stuff, I try, but there is never any grease to drain out of the pan. Hope that works well, I like squash, and I love beef, the recipe just sounds really simple and good to me :-)

The URL in my profile links to my mum's site, Mamta's Kitchen.

It started as a way for my mum to share all the family (Indian) recipes with my sister and I plus it allowed the wider family (who are in India and the USA) to access them too but fairly quickly it started getting lots of visits and we've since added discussions boards, tips sections, festivals sections etc. (My husband and I created the site and maintain/ develop it; mum does the content).

It's just a hobby thing for my mum but it's really great to see the response.

Anyway, it is mostly Indian recipes but also has some international ones. Nowadays it's not just mum's recipes but recipes from her friends (you'll be able to see who wrote it in the author field for each recipe) as well as some of mine and some sent in by regular visitors.

None of the recipes (to the best of our knowledge) are from cookery books so it's all home cooking kind of stuff.

put fried egg on it

This is what I do. Ingredients change according to what's available, but cabbage is pretty much essential

Yakisoba (Fried buckwheat noodles)

1 packet of fresh soba noodles
Cabbage, carrots, onion, leek
Egg
Meat (pork or beef in thin slices)
Fish stock
Red ginger
Japanese style Sauce

Put some water in a frypan and add the vegetables and fish stock. Let them cook for a bit before adding the meat and then the noodles. Last is the egg. Mix everyhing together. By the time it's ready, the water will have boiled away.
Serve with sauce and mayonnaise. There's a lot of leeway with the ingredients but the only hard and fast requirement is that you eat it with chopsticks. ;-)

My wife makes an awesome pizza lasagna, just use pizza toppings instead of lasagna and layer with the regular lasaga noodles. Really great if you don't like pizza crust.

and if I can find my recipe for Pork Green Chili I'll post it...yummy over chicken enchiladas (spelled right?).
