DO most people use the default settings on the processing parameters or do they use Adobe RGB .....or does every just shoot raw?

One of the issues i have with the 10D is the images sometimes come out looking a bit soft. I shoot mainly in raw so i can adjust those later. However I too have a question, Does the shapening option really make that huge of a difference under the processing parameters.
