It's pine tar, and it's used to get a better grip on the bat. Pine tar will stick to the hands, and some will get on the batting helmet.

Many players will infrequently-to-never wash their helmets, especially during a winning streak, playoff run, etc. It's a susperstition thing, and not just confined to the Red Sox.

I must admit I asked the same question just a bit ago... looks like they rode to the game upside-down through a mud bog or something!

One of the Astros (Biggio I think) was well known for refusing to get a new helmet, season after season, I presume for "luck" reasons. That was a couple years ago though - I don't know if he ever did upgrade.
